The story behind it

As a cake decorator, this is my go-to hack. I always bake my cakes according to the directions on the box and follow the rest of the box instructions as is.

From the kitchen of Rachel White

The Cake Decorator’s Secret Cheesecake Cake

Ingredients

  • 2 boxes cake mix (white, or your favorite flavor)
  • 1 small box cheesecake pudding mix, dry
  • Mayonnaise, the same amount as the oil called for on the boxes
  • The other ingredients called for on the boxes (eggs, water, etc.)

Frost with

Classic Vanilla & Chocolate Buttercream (see Desserts)

Method

  1. Mix the cake batter following the box directions, adding the dry pudding mix and using mayonnaise in place of the oil.
  2. Bake according to the directions on the box.
  3. Remove the cakes from the pans, then freeze them before decorating.

Good to know

Freeze the cakes before decorating so they don’t peel up.

Letters from the porch

Pull up a chair.

Every so often I’ll write you a letter. A recipe, a tradition we’re trying, whatever magic (or glorious mess) happened at our table that week. No lectures, nothing salesy, just a friend waving from the porch.
